Coloured eggs

Although New Zealanders have a definite preference for brown-shelled eggs, there is no difference in nutritional value or taste compared with any other colour. Shell colour is genetically determined – the blue eggs were laid by South American Araucanas hens. Yolk colour is influenced by diet – feed containing grass or legumes such as clover or lucerne, which contain carotene, will produce brighter yellow yolks.
