Bluff is the home of oyster production in New Zealand. The shellfish are found throughout Foveaux Strait and have been harvested commercially since the 1860s. These workers are bagging oysters in 1899. Until 1992 the harvest was recorded by the sackful – each sack contained around 770 oysters.
