A resident of Golden Bay has turned fruit and vegetables into preserves, with colourful covers tied with string. Making jams, chutneys, pickles and preserves is a way of turning surplus vegetables into home-made goods, and saving on expensive store-bought alternatives. New Zealand recipe books have traditionally carried pages of recipes for jams and preserves. Even Brett’s colonists guide had 30 pages of instructions for making preserves.
